Our version of the PREMIER regional roast from northern Minnesota’s mining community. It’s a humbler, mid-western version of it’s Italian cousin that’s happy gently roasted, grilled with rusticity, or braised in your slow cooker in the “set it and forget it” method. We take the coppa or collar — the nicest part of the Boston butt on the shoulder of the pig, then score and season it.

Delivery

We deliver (locally) or ship in our biodegradable boxes nationwide. All of our products are produced in inspected facilities with strict sanitary guidelines and are flash frozen before delivery. We will contact you via email when your delivery is scheduled.
